HOPS

We grow Certified organic New York Cascade and Columbia hops. Cascades are a tried and true workhorse hop that can be used for both bittering and aroma in the brew process by adding a mild citrus flavor. Usually found in Pale Ales, IPA, Porters, and Wheat beers, you can taste ours in Sandy Loam, a beautiful Pale Ale by Springs Brewery from East Hampton, NY.  

Columbia hops are an almost forgotten variety. This beautiful hop adds an aroma filled with crisp pineapple, bright lemony citrus notes – strong but not as powerful as a Chinook. Best used in lighter beers or when seeking a crisp finish. This variety will mature in late summer 2022. Stay tuned for where and when you can taste some. Alpha Acids: 13% Beta Acids: 4.0%
